Chocolate Nut Butter Freezer Cups

When I was in elementary school - my mom brought her lifelong dream to life and opened an artisan bakery in our hometown. My sister and I grew up baking and cooking in both of our parent’s homes while working at the bakery through middle school, high school and holidays.

I ended up with the biggest sweet tooth of all - can’t resist chocolate peanut butter. And whats the thing my mom can’t stand? Chocolate peanut butter. She’d make the best chocolate peanut butter cookies at the bakery - but I’ve never in 35 years seen my mom eat chocolate or peanut butter.

Needless to say - my sister and I still love all things chocolate - but for me keeping Justin’s peanut butter cups in my house ends in me eating a bag of peanut butter cups in one sitting. And since I know what sugar does to the body, brain and my health overall - my goals and eating sugar regularly don’t match up.

Over Thanksgiving - my sister made these freezer cups - but they didn’t last long.

Freezer Chocolate PB Cups

Chocolate Layer:

  • 2 T coconut oil, melted

  • 4 T nut butter

  • 4 T unsweetened cocoa powder

  • 1/4 t vanilla extract

  • 1/8 c - 1/4 c Swerve (confectioner’s style) **

**this varies depending on your sweetness preference / substitute with honey or monkfruit or coconut sugar if preferred

Peanut / Nut Butter Layer:

  • 2 T coconut oil, melted

  • 4 T nut butter

  • 1/4 t vanilla

  • 1/4 c Swerve

  • sea salt flakes (for topping)


Directions:

1. Combine all ingredients for chocolate later. Stir till smooth.

2. Pour chocolate layer into silicone molds. Freeze for 10 minutes.

**I prefer mine pretty thin so I only do a small layer of each

3. Combine ingredients for nut butter layer. Stir till smooth.

4. Pour peanut butter mixture on top of partially frozen chocolate layer. Sprinkle with sea salt.

5. Freeze until firm. Keep frozen until ready to eat.
